Chicken Biryani Fried Rice

Ingredients
- ¾ cup (180g) white or brown rice.
- 9 tbsp (90g) Quaker Oats For Rice.
- 1¾ cups (400ml) water for cooking rice in a rice cooker.
- 50ml evaporated milk.
- 4 pcs lean chicken breast (400g), diced.
- ½ tsp salt.
- 1 tsp ground ginger.
- 1 large onion, chopped finely.
- 1 star anise.
- 2 tbsp (30g) raisins.
- 2 packets (17g) biryani fried rice mix.
- 4 eggs, lightly beaten.
- 30g cashew nuts, roasted.
- 1 sprig coriander leaves, chopped finely.
- 1½ tbsp unsaturated cooking oil.
For Cucumber Yogurt / Raita - Mix all ingredients together and refrigerate
- 1¼ cups low or non-fat yogurt.
- 1 small cucumber, diced.
- 1 onion, diced.
- 1 tsp mustard seeds, roasted.
- 1½ tbsp salt.
Directions:
- Mix white or brown rice with Quaker Oats For Rice and 1¾ cups water and cook the rice in a rice cooker. When the rice is cooked, dish out the rice.
- Gently fluff up cooked rice and leave it to cool.
- Marinate chicken with salt and ginger and set aside.
- Heat half the oil in a non-stick pan, stir-fry the onion and star anise until fragrant.
- Add marinated chicken and stir-fry until chicken is cooked. Dish out on a side plate.
- Heat the remaining oil in a non-stick pan, add in eggs and fry until cooked. Add cooked rice, raisins, evaporated milk, biryani fried rice mix, and chicken mixture. Stir- fry rice for 3-4 minutes over high heat.
- Just before serving, sprinkle toasted cashew nuts and chopped coriander leaves on the rice.
- Serve rice with cucumber yogurt.
