Minced Chicken, Salted Fish & Long Beans Rice
Serves: 4
Preparation Time: 20 minutes
Cooking Time: 25 minutes

Ingredients

  • ¾ cup (180g) white or brown rice.
  • 9 tbsp (90g) Quaker Oats For Rice.
  • 1¾ cups (400ml) water for cooking rice in a rice cooker.
  • 1 tbsp chicken stock concentrate.
  • 50g salted fish meat, sliced thinly.
  • 4 cloves garlic, chopped finely.
  • 300g minced chicken.
  • 100g long beans, cut into 0.5cm length.
  • 1 tbsp fish sauce.
  • 1½ tbsp unsaturated cooking oil.
  • 1 tbsp sesame oil.

Directions:

  • Heat half the oil in a non-stick frying pan. Fry salted until lightly golden and dish out on a side plate.
  • Add the remaining oil, sauté garlic until fragrant, add in minced chicken and stir-fry for 3 minutes, then add in long beans and cook for another 1 minute.
  • Season with fish sauce and turn off fire.
  • Add rice, Quaker Oats for Rice water and chicken stock concentrate in a rice cooker and cook. After 10 minutes, add in cooked minced chicken mixture (but do not stir), until the rice is cooked.
  • Just before serving, add in fried salted fish and drizzle sesame oil over rice.
  • Fluff up the rice and serve with finely sliced green chilies and light soy sauce.
