Savory Oats Porridge
Savory seasoned chicken in soft and creamy oats porridge garnished with spring onions.
Ingredients
- 1 cup/90 g Quaker Quick Cook Oats
- 100g of Chicken fillet, sliced thinly
- ½ tsp. sesame oil, optional
- 1 tsp. light soy sauce
- Pinch of white pepper
- ½ cup (100 g) rice, washed and soaked for 30 minutes
- 1 litre of water
- 1 tablespoon cooking oil
- Ginger, finely shredded
- 2 dry mushrooms, soaked, washed & sliced
- 1 small carrot, diced
Garnishing
- Spring Onions
- Fried Onions
- Chilies, sliced thinly
Directions:
- Season chicken with sesame oil, soy sauce and pepper. Set aside.
- Heat oil in saucepan. Add ginger, mushrooms and chicken. Cook, stirring, for 2 – 3 minutes. Add rice, water, oats & carrots.
- Cook about 30 minutes until porridge is soft and creamy. If too thick and dry, adjust consistency with additional hot water. Season to taste with salt and pepper.
- Serve in individual bowls with a dash of sesame oil & soy sauce. Garnish with spring onions, fried shallots & chilies.
