Tuna Rice and Oat Salad

Ingredients

  • ¾ cup (180g) white rice (for a healthier dish, use brown rice).
  • 9 tbsp (90g) Quaker Oats For Rice.
  • 1¾ cups (400ml) water for cooking rice in a rice cooker.
  • 1 tbsp ikan bilis granules.
  • 2 cans tuna chunks in water, drained out water, flaked well with a fork.
  • 4 stalks celery, sliced.
  • 10 cherry tomatoes, cut into wedges.
  • 8 stalks Italian parsley, chopped finely.

For the dressing

  • ½ cup (125ml) apple cider vinegar.
  • 3 tbsp brown sugar
  • 1 tsp salt
  • 3 cloves garlic, chopped finely
  • 1½ tbsp virgin olive oil

Directions:

  • Mix white or brown rice with Quaker Oats For Rice and 1¾ cups water and cook the rice in a rice cooker. When the rice is cooked, dish out the rice and allow it to cool.
  • Pour the dressing ingredients into a jar, cover and shake well.
  • Just before serving, put rice, tuna flakes, celery, tomatoes and Italian parsley in a mixing bowl. Add the dressing and mix well.
  • Serve at room temperature or chilled.
