Tomato Seafood Rice
Serves: 4
Preparation Time: 20 minutes
Cooking Time: 10 minutes

Ingredients

  • ¾ cup (180g) white or brown rice
  • ¼ cup (60g) Quaker Oats For Rice.
  • 1¾ cups (400ml) water for cooking rice in a rice cooker.
  • 3 large eggs, lightly beaten.
  • 6 cloves garlic, chopped finely.
  • 200g medium-sized prawns, shelled.
  • 2 pieces fish cake, diced.
  • 6 crab sticks, sliced.
  • 1 tbsp tomato paste.
  • 4 tbsp tomato ketchup.
  • 12 tbsp oyster sauce.
  • 1 tbsp vinegar.
  • 1 tbsp sugar.
  • 4 stalks spring onions or chives, thinly sliced.
  • 1½ tbsp unsaturated cooking oil.
  • ½ tsp salt.

Directions:

  • Mix white or brown rice with Quaker Oats For Rice and 1¾ cups water and cook the rice in a rice cooker. When the rice is cooked, dish out the rice and allow it to cool.
  • Heat 1/2 tbsp oil in a non-stick pan, add the beaten egg and stir. When the egg is cooked, remove from the pan and set aside.
  • Heat 1 tbsp oil in the same pan, sauté garlic and add in the prawns. Once the prawns are cooked, add fish cake and crab sticks. Stir-fry for about half a minute and then dish out on a small plate.
  • Combine tomato paste, tomato ketchup, oyster sauce, vinegar and sugar. Cook mixture in a hot pan. When the mixture thickens slightly, add in cooled rice and mix well.
  • Add in seafood mixture, salt, eggs, and sliced spring onions or chives. Mix well, dish out and serve.
