Rice with Thai Style Seafood
Serves: 4
Preparation Time: 10 minutes
Cooking Time: 10 minutes

Ingredients

  • ¾ cup (180g) white or brown rice
  • 9 tbsp (190g) Quaker Oats For Rice
  • 13/4 cups (400ml) water for cooking rice in a rice cooker
  • 1 tbsp unsaturated cooking oil

Seafood ingredients

  • 1 large onion, diced
  • 1 clove garlic, chopped finely
  • 4 bird's eyes chillies, chopped finely
  • 2 large squids, cleaned, sliced
  • 1 piece fish, cut into thick slices
  • 10 fresh prawns, shelled, deveined
  • 10 baby corn, cut into rings
  • ¼ small cauliflower, cut into florets
  • 1 tsp fish sauce
  • 1 tbsp oyster sauce
  • ¾ tsp salt
  • 3 stalks coriander, chopped finely
  • 2 small tomatoes, chopped finely

Directions:

  • Heat oil in non-stick pan and stif fry onion, garlic and bird's eye chilies for a minute.
  • Add in seafood and stir-fry over high heat for a minute and then add in the vegetables and cook for another 3 minutes
  • Add fish sauce, oyster sauce and salt.
  • Lastly add in coriander and turn off heat.
  • Mix white or brown rice with Quaker Oats For Rice and 1¾ cups water and cook the rice in a rice cooker After about 10 minutes, add the seafood mixture into the rice cooker. Do not stir until the rice is cooked. When the rice is cooked, mix lightly, dish out and serve.
