Thai Shrimp Paste Rice

Ingredients

  • ¾ cup (180g) white or brown rice.
  • 9 tbsp (90g) Quaker Oats For Rice.
  • 1¾ cups (400ml) water for cooking rice in a rice cooker.
  • 2 tbsp Thai shrimp paste.
  • 1½ tbsp unsaturated cooking oil.
  • ¾ tsp salt.
  • 4 boneless chicken fillets (400g), sliced into thick slices.
  • 2 tbsp thick sweet soy sauce.
  • 1 tbsp palm or soft brown sugar.
  • 1 tbsp fish sauce.
  • ½ tsp black pepper to taste.
  • 4 eggs, lightly beaten.
  • 1 green mango, shredded finely.
  • 4-6 bird's eye chilies, chopped finely.
  • 8 shallots, sliced thinly.
  • ¼ cup firmly packed fresh coriander leaves.

Directions:

  • Heat ¼ tbsp oil in a non-stick pan, stir-fry garlic and shrimp paste over medium heat for about 2 minutes.
  • Add washed rice, Quaker Oats For Rice water, fried shrimp paste mixture and ½ tsp salt in a rice pot and cook until done.
  • Heat 1 tbsp oil in non-stick wok, stir-fry chicken fillet with thick sweet soy sauce, palm sugar or soft brown sugar and fish sauce over slow fire for 6-7 minutes or until the chicken is cooked, looks shiny and sticky. Dish out and set aside.
  • Beat the eggs with ¼ tsp salt and pepper. Using a non-stick pan and ¼ tbsp oil, pan-fry eggs and then slice into thin slices. When cooked, dish out and keep aside.
  • Just before serving, fluff up rice and divide the rice into 4 plates.
  • Add cooked chicken, sliced eggs, green mangoes, bird's eye chilies, sliced shallots and chopped coriander around rice.
