Anchovies Oats Porridge

It's easy to make and healthy to eat. Anchovies Quaker Oats porridge makes a good breakfast meal.

Ingredients

  • ½ cup or 45g Quaker Quick Cook
  • ½ cup (70g) rice, washed and soaked for 30 minutes
  • 4 cups or 1 litre 2 ½ cups water
  • 2 thin slices of Ginger
  • 2 tsp. or 10 g Anchovies, washed & soaked
  • 2 dry mushrooms, soaked and cut into small pieces
  • 40g carrots, shredded
  • Light soy sauce
  • Sesame oil
  • White pepper, to taste
  • Pinch of salt

Garnishing

  • 2 tsp. fried anchovies
  • 1 stalk, sliced spring onions
  • 2 tsp. fried onions

Directions:

  • Boil rice in water together with anchovies and ginger until it turns to porridge.
  • Add oats, carrots and dried mushrooms into the porridge. Simmer 10 minutes.
  • Stir in salt.
  • To serve, scoop porridge into individuals bowls. Garnish with spring onion, fried onions, fried anchovies & dash of pepper, sesame oil & light soy sauce.
