Sweet & Spicy Chicken Oats

This sweet and spicy oatmeal-crusted chicken is easy to cook and tasty to enjoy.

Ingredients

  • 500 g boneless chicken
  • 1 cup Quaker Oats Quick Cook
  • ½ cup corn flour
  • Pinch of salt
  • White pepper to taste
  • 1 egg, beaten
  • 2 tsp. fish sauce
  • Cooking Oil
  • Curry leaves
  • 5 tsp. Chili Thai Sauce
  • 1 tsp. lemon squeeze

Garnishing

  • 2 cloves shallot, finely chopped
  • 1 stalk of coriander leave, finely chopped
  • 5 chili padi, sliced finely
  • 1 carrot, sliced finely
  • ½ orange; thinly sliced
  • 1 tsp. sesame seeds

Directions:

  • Add Quaker Oat Quick Cook together with corn flour in 1 bowl. Stir thoroughly & put aside.
  • Cut chicken by lengthwise inside measure ½ cm. Marinate chicken with black pepper, pinch of salt & Fish sauce. Add egg & stir well.
  • Dip chicken into oat / corn flour mixture.
  • Heat cooking oil in saucepan. Deep-fry the chicken with curry leaves till cooked. Drain and set aside.
  • Add in the cooked chicken, carrot, shallot, coriander leave, sesame seeds & chili padi into dressing bowl.
  • Use the oranges to decorate the dish on the side.
  • Mix well Thai chili Sauce & Lemon squeeze. Pour into the dressing bowl. Serve immediately.
