Quaker Salad Prawn

This healthy salad with large succulent prawns sprinkled with Quaker Oats is a delight among seafood lovers.

Ingredients

  • 1 cup/90 g Quaker Quick Cook Oats
  • 600 g large prawns (washed and shelled)
  • 2 cups (500 ml) water
  • 50ml mayonnaise
  • White pepper to taste
  • Salt to taste

Garnishing

  • Tomatoes (sliced)
  • Lettuce
  • Red Chilies (sliced)

Directions:

  • Bring 2 cups of water to the boil in a medium-size saucepan. Add prawns and cook 2 minutes or until prawns are pink and firm. Remove with slotted spoon and set aside.
  • Add oats & mayonnaise to the water remaining in the pan. Bring mixture to the boil and cook, stirring for 2 minutes. Season to taste with salt and pepper.
  • Transfer oats to a large serving plate or individual small bowls. Garnish with the cooked prawns and sliced tomatoes, lettuce and chilies.
