Quaker Salad Prawn
This healthy salad with large succulent prawns sprinkled with Quaker Oats is a delight among seafood lovers.
Ingredients
- 1 cup/90 g Quaker Quick Cook Oats
- 600 g large prawns (washed and shelled)
- 2 cups (500 ml) water
- 50ml mayonnaise
- White pepper to taste
- Salt to taste
Garnishing
- Tomatoes (sliced)
- Lettuce
- Red Chilies (sliced)
Directions:
- Bring 2 cups of water to the boil in a medium-size saucepan. Add prawns and cook 2 minutes or until prawns are pink and firm. Remove with slotted spoon and set aside.
- Add oats & mayonnaise to the water remaining in the pan. Bring mixture to the boil and cook, stirring for 2 minutes. Season to taste with salt and pepper.
- Transfer oats to a large serving plate or individual small bowls. Garnish with the cooked prawns and sliced tomatoes, lettuce and chilies.
